This is from A Yolande, and has become the standard birthday cake. This one is easy and popular with children and adults alike. I use an icing recipe which came from Ahmadi's Grandmother. (Remember Dadi?)

Ingredients

  • ¼ kg butter
  • ¼ kg sugar
  • ¼ kg cake flour
  • 3 eggs
  • 25 grams cocoa
  • 1 teaspoon soda bicarbonate powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla essence
  • ½ cup dahi (yoghurt)
  •  

    Chocolate Icing

  • ¼ cup butter
  • 2 tablespoons cocoa
  • 2 tablespoons water
  • 1 teaspoon vanilla essence
  • 200 gms icing sugar approx.
  •  

    Method

    Beat together the butter and sugar till creamy

    Add eggs one at a time, beating well each time.

     Fold in the sifted ingredients, alternately with the curd.

     Add the vanilla essence.

    Stir.

    Bake in a greased pan for about ½ an hour.

    Chocolate Icing

    Mix together the butter,water,cocoa and vanilla essence.

    Heat on a low fire till it becomes greasy.

    Take it off the fire.

    Add the sifted icing sugar till it becomes smooth and thick and coats the back of the spoon.

    Use this to ice the cake.
